
Don't throw away your pumpkin scrapings so fast - save the seeds! I found this great little pumpkin trail mix recipe. I'm a huge fan of trail mix, so this is very exciting for me. Things You'll Need:
- 1 medium-sized pumpkin Baking sheet Olive oil or butter Salt Garlic powder 4 cups dry cereal 1 cup nuts 1 cup dried fruit 1 cup chocolate chips or M&Ms Ziploc bags Large plastic container

Roasting Pumpkin Seeds
Step 1
Rinse the pumpkin seeds with water as soon as you have removed them from the pumpkin. Use your fingers to pick out the pulp. Drain the seeds and discard the pulp.
Step 2
Spread out the pumpkin seeds in a single layer on a baking sheet and allow them to dry overnight.
Step 3
Toss the pumpkin seeds with olive oil or butter. Sprinkle with salt and garlic powder or your choice of seasonings.
Step 4
Bake at 250-300 degrees, checking and tossing the seeds every 10 minutes Bake until the seeds are slightly browned.
Step 5
Cool seeds before adding to trail mix.
Making Trail Mix
Step 1
Choose your favorite breakfast cereal as the main ingredient for your trail mix. Honey Nut Cheerios, Raisin Bran, or granola taste great in a trail mix.
Step 2
Choose nuts that go well with pumpkin seeds, such as sunflower seeds, cashews or almonds.
Step 3
Decide what types of dried fruits you would like to add to your mix. Banana chips, raisins or dried apricots taste great with pumpkin seeds.
Step 4
Pick a favorite sweet to top off the mix such as chocolate chips or M&Ms.
Step 5
Pour all ingredients into a large container and stir.
Step 6
Divide into sandwich-sized Ziploc bags for a convenient energy-boosting snack while hiking or backpacking.
